I was thinking today about my mother’s chocolate chip cookies and how yummy they are. Then I came up with a new idea for my blog, Recipe Thursday. Every week I’m going to post one of my favorite recipes. I hope you enjoy these as most of them are my favorites and my “comfort food.” I can guarantee that NONE of these will be even remotely healthy! lol
Chocolate Chip Pudding Cookies
3&1/3 C. unsifted all-purpose flour
1&1/2 tsp baking soda
1&1/2 C. butter or margarine, softened
1 C. firmly packed light brown sugar
1/2 C. granulated sugar
1 package (6-serving size) Jell-O Brand, chocolate or vanilla instant pudding & pie filling
1&1/2 tsp. vanilla
3 eggs
3 C. chocolate chips
Mix flour with baking soda. Combine butter, the sugars, pudding mix, and vanilla in a large mixer bowl. Beat until smooth & creamy. Beat in eggs. Gradually fold in flour mixture; then stir in chocolate chips— dough will be stiff—
Drop by rounded teaspoonfuls onto ungreased baking sheets, about 2 inches apart.
Bake at 375 degrees for 8-10 minutes.
