Easy Crock Pot Macaroni & Cheese

I’ve been so busy with work this week. Yesterday I worked on a mailing list for my boss almost ALL day! I didn’t think it would take that long and since they needed it today I HAD to get it done. Now I have sore fingers and a tight pain in my neck and I realized I forgot to post my recipe yesterday.

I’ve made this twice in the past 2 weeks and it’s turned out great both times. I’ve made mac & cheese recipes before that have turned out really bland and tasteless but this one is MUCH better and has a better texture.

Easy Crock Pot Macaroni & Cheese

* Makes about 4 servings*

1/4 C, Flour
1 tsp salt
1/4 tsp. pepper
2 TBSP minced onions (I use dried minced onions but I bet fresh would taste even better)
1/2 tsp paprika
3 C. milk
2 C. grated cheddar cheese (I have use both sharp & mild and I would recommend sharp)
2 C. uncooked elbow macaroni

1. Spray crock pot with non-stick spray

2. In saucepan, combine flour, salt, pepper, onions, and paprika.

3. Pour in milk & stir with a whisk until there are no lumps.

4. Heat & continue stirring until mixture boils and thickens.

5. Add cheese & macaroni

6. Stir until well mixed.

7. Pour into 3 1/2 qt. slow cooker.

8. Cover and cook on low 2 1/2 hours or on high for 1 hour.

This is the perfect meal when you realize you’re out of everything but cheese and noodles. Both of my kids really enjoy this. I have used it as a main dish but I think it would also be wonderful with fried chicken or another meat dish.

    I love mac and cheese sometimes. Great comfort food! One question: there is no butter or margerine in the recipe…usually you mix the butter with the flour, cook for a few minutes, then add the milk, etc….this is probably better because it’s lower fat, but I’m wondering if it thickens up the same as a normal white sauce?

    It turns out nice and thick.. but I think next time I’ll add some butter to see what happens. I can’t imagine adding it would ruin it, it would probably make it better.
