Last-Minute Homemade Gift Idea: Chocolate Coated Sweet Peanut Brittle
Homemade gifts are often some of the best and I enjoy making treats to share with our neighbors. This year I’ve made quite a few different items including cookies, Saint Nick cereal bars, homemade candies, etc. but this is by far my favorite. I found this recipe on the Kraftfoods.com website and it turned out SO good! This would be great alone or in addition to other treats you’re already making.
Sweet Peanut Brittle
1 Cup Sugar
1/2 Cup Light Corn Syrup
1 Tablespoon butter
2 C. Planter’s Cocktail Peanuts
1 teaspoon Baking Soda
1 teaspoon vanilla
Spray large baking sheet with cooking spray. Microwave sugar and corn syrup in a large microwaveable glass bowl on high for 5 minutes. Stir in butter and peanuts. Microwave 3-4 minutes or until pale golden brown. Stir in baking soda and vanilla. Mixture will foam. Spread into prepared baking sheet. Cool completely and break into pieces.
chocolate coating (optional):
4 squares baker’s semi-sweet chocolate
1/4 Cup Creamy Peanut Butter
Microwave chocolate in 1 C. measuring cup on high 1-2 minutes or until chocolate is melted when stirred. Add peanut butter. Stir until melted. Dip 1/2 of each candy piece into chocolate mixture; scrape bottom against edge of cup to remove excess chocolate. Place on sheet of foil or waxed paper. Refrigerate 20 minutes or until chocolate is firm.
